It’s a Tuesday and you drag yourself out of the house. You decide to go grocery shopping at your local supermarket. You think to yourself “I should probably stop eating out so much and cook for once..”. And then… you see it: A ROTISSERIE CHICKEN. It’s so beautiful… you need to buy it.
I absolutely love rotisserie chicken. But I can never finish one, so I’ve compiled a list of recipes of meals to make when you have leftover shredded chicken so nothing goes to waste!
1. Chicken Noodle Soup
What you’ll need:
Half of a shredded rotisserie chicken
1 box of chicken broth
2-3 cups of water
1 stalk of celery
3-4 carrots
1 tomato
1 ½ cups of pasta shells
1 tablespoon of garlic powder
Salt and pepper to taste
Instructions:
Cut up veggies into chunks and place it in a large pot
Add shredded chicken and pasta shells
Pour in water and broth
Season mixture (salt, pepper, garlic powder)
Mix and simmer until veggies and shells are soft
Add salt and pepper to taste
2. Chicken Salad Lettuce Wraps
What you’ll need:
Quarter of a shredded rotisserie chicken
2 sticks of celery
Half of a small red onion
Salad dressing of your choice (I like caesar)
Salt and pepper to taste
Green leaf lettuce OR iceberg lettuce (for the wraps)
Instructions:
Chop up celery and onion
Mix together the shredded chicken, celery, onion, salad dressing, salt and pepper
Serve on lettuce and make delicious wraps
3. Shredded Chicken Chili
What you’ll need:
Half of a shredded rotisserie chicken (or whole, depending on how much you want to make!)
2 cups of chicken broth
1 can of diced tomatoes
1 can of red kidney beans
1 can of corn niblets
1 large yellow potato
1 small red onion
1 tablespoon of garlic powder
1 packet of chili powder
Salt and pepper to taste
Instructions:
Cut up veggies into chunks
Mix together chicken, chili powder, and chicken broth in a large pot
Pour in veggies
Add salt and pepper to taste
Simmer mixture until veggies are soft
4. TACOS
What you’ll need:
Taco shells (soft or hard – your choice)
Half of a shredded rotisserie chicken
1-2 packets of taco seasoning
1 diced tomato
Salsa
1 lime
Instructions
Mix together chicken and taco seasoning in a pan
Dice the tomato
Eat them however you like (with salsa, sour cream, however you like it!)
Use lime for seasoning
Voila! Chicken tacos!
5. Chicken Pesto Pasta
What you’ll need
¼ – ½ cups of shredded rotisserie chicken
2 cups of pasta shells
1 tablespoon of olive oil
2 cloves of garlic
½ cup of pesto
1 red pepper
Salt and pepper to taste
Instructions
Boil pasta in a pot until al dente then drain
Mince garlic and fry in oil in a large pan
Thinly dice the red pepper
Mix together shredded chicken, red pepper, and pasta in a large pan
Pour in pesto and mix ingredients together
Season with salt and pepper
6. BONUS – Shredded Chicken Congee
What you’ll need:
Rice cooker
1 cup of rice
Half of a shredded rotisserie chicken
1 box of chicken broth OR water
Salt and white pepper to taste
Optional: chopped veggies (celery, carrots, corn)
Instructions
Pour in rice and either broth/water in the rice cooker
Add in shredded chicken
Let simmer until rice cooker is finished cooking
Add salt and pepper to taste
